Cold Protein Salad

INGREDIENTS

8 oz. PAOW! Pieces
2 stalks celery, diced
1/2 c. diced onion
1/2 c. chopped parsley
1/2 c. vegan mayonnaise
1/3 c. chopped dried cranberries
1/4 c. pecans, chopped
1/2 c. sliced grapes

PREPARATION

  1. Preheat oven (no convection) to 375 degrees. Season PAOW! Pieces with salt and pepper and place on nonstick sheet pan. Bake about 15 minutes if thawed, 20 minutes if frozen.
  2. Remove from oven and allow to cool.
  3. Mix PAOW! with remaining ingredients and refrigerate overnight for best results. Serve chilled.
