Avocado Toast


8 oz. PAOW! Pieces
2 avocados
1/4 c. lime juice
1/4 c. red onion, chopped
1/4 c. cilantro, chopped
1/2 c. cherry tomatoes, halved
3 Tbsp. extra virgin olive oil
1 Tbsp. balsamic vinegar
1/4 c. basil, torn
4 oz. blueberry compote
2 slices multi-grain bread, toasted
Salt and pepper to taste


  1. Mash avocado and mix with lime juice, red onion, cilantro, salt and pepper.
  2. Toss tomatoes with basil, olive oil, and balsamic vinegar.
  3. Add oil to nonstick skillet and sauté PAOW! until warm and toss with blueberry compote.
  4. Assemble avocado mix, tomatoes, and PAOW! on toasted bread.
