INGREDIENTS
8 oz. PAOW! Pieces
2 avocados
1/4 c. lime juice
1/4 c. red onion, chopped
1/4 c. cilantro, chopped
1/2 c. cherry tomatoes, halved
3 Tbsp. extra virgin olive oil
1 Tbsp. balsamic vinegar
1/4 c. basil, torn
4 oz. blueberry compote
2 slices multi-grain bread, toasted
Salt and pepper to taste
PREPARATION
- Mash avocado and mix with lime juice, red onion, cilantro, salt and pepper.
- Toss tomatoes with basil, olive oil, and balsamic vinegar.
- Add oil to nonstick skillet and sauté PAOW! until warm and toss with blueberry compote.
- Assemble avocado mix, tomatoes, and PAOW! on toasted bread.
